Small Healthy Eating Wins

Eating healthy is work.  It’s much easier to eat something out of a box or bag or order in or stop by a drive-thru.  Eating healthy requires grocery shopping, planning ahead, and cooking (oh my!).

I personally go in phases where I’ll be really good about planning my meals, packing lunches, and cooking meals ahead and then I’ll fall off the wagon.  I think this is probably pretty normal.  Yes?

This week I had a few wins in the healthy eating arena.  Nothing earth-shattering, but I’m going to number them off in this post.  Think of it as a carryover of yesterday’s advice to celebrate small achievements!

This week I’ve been really good about cooking healthy meals at home.  One of them was pork chops over quinoa with mashed cauliflower.

It was SO good.  Hearty and healthy and filling.

The next morning I was packing some leftovers for lunch.  I had quinoa and mashed cauliflower but no meat left.  I’ve been watching my macronutrients (carbs, fat, protein) to see where I’m falling and I wanted some protein to round out my meal since I normally don’t seem to get quite enough.

I had no meat thawed so I seriously thought about just buying lunch at work.  When I do that I know I don’t make the best choices though.  So instead I sucked it up and quickly thawed, seasoned, and sautéed some shrimp I had in the freezer.  I was able to do that in the time it took me to peel and eat a couple of hard-boiled eggs for breakfast (Win #2!).

The lunch was delicious and worth the few minutes of prep in the morning.

ALTHOUGH, I would highly recommend doing prep the night before or even better, some weekend prep.  That way you won’t end up like me having to cook in the morning before work because you weren’t prepared. :)  I’m still proud of myself for doing it though.

Tonight, despite being super tired, I cooked some chicken tenders and asparagus and paired them with leftover quinoa.  I have leftovers of both for tomorrow too.

Yum your quinoa looks tasty! I had a small win last night, I was so hungry while I was running errands after work I thought about getting something to eat while I was out, but I sucked it up and waiting until I got home and made myself a healthy dinner!

Nice job! That’s so hard when you’re out and about.

The quinoa was so good! It was just cooked in broth and mixed with a little diced onion, pepper, some spices (parsley, thyme, and salt I think) and some lemon juice. I’d recommend it. It’s the perfect base for a protein!
