Time for another post where I share with you some recipes I’ve tried and what I thought of them.  I’ve got some really good ones this week.  I hope this inspires you to try something new!

Oatmeal Raisin Breakfast Cookies

These are definitely not dessert cookies.  They are more dense, just barely sweet (with honey, no butter or sugar), and have lots of hearty stuff in them like oats and flax.  They are a little dry so definitely pair with your morning coffee or tea.

Mine didn’t flatten out while baking so next time I might shape them a little better.  The batch made 18 decent sized cookies that I put in freezer bags.  Just 30 seconds in the microwave and you have a warm breakfast or snack.  Definitely a good find for me!

Ham, Egg, & Cheddar Cups

The link is actually to a recipe for turkey, egg, and goat cheese cups but I switched it up, per the post’s recommendation, to ham, egg, cheddar, and green onion.  It is SO easy.  They were really tasty out of the oven but a few days later they didn’t seem to be as good when reheated.  I’ll probably try again and see if I get the same result as these make the most sense for me if I can make them ahead and reheat a couple each day for breakfast.

Creamy Garlic Avocado Sauce

This was a really tasty, creamy sauce.  I used it on pasta.  It was very easy to make (really just avocados, salt, garlic, and milk in the food processor) and a good way to use up avocados and get some healthy fats.

Cold Greek Quinoa Salad

This salad is a big bowl of goodness.  Red pepper, onion, cucumber, tomatoes, kalamata olives, and feta mixed with quinoa.  The dressing is olive oil, red wine vinegar, and some spices.  I am eating this for lunch about every day this week.  I’m a big fan.

I will have to try those ham egg cups. They look delicious!
