Spaghetti Squash & Homemade Meatballs

I’m going to spoil the surprise:  this meal was a wild success!

I’ve never made meatballs or had spaghetti squash and I was in the mood for something new.

For the meatballs I looked at a couple of recipes online for inspiration and then did my own thing. I used 1 lb of beef and 1 lb of pork because I’m pretty sure the Food Network told me that mixing meats makes the best meatballs.  This is how I get a lot of my food knowledge. :)

I added an egg, some Dijon mustard, salt, pepper, paprika, and caraway seeds.


Mix it up, roll it in to balls (I got 12 out of this batch), put them on a baking sheet, and throw those bad boys in the oven.  I did 30 minutes at 350, turning them over half way through.  They turned out pretty good for my first try.


Next I tackled the spaghetti squash, once again consulting the internet because if not for healthy living bloggers I wouldn’t even know what one was!

I cut it in half and baked it in the oven.  Then I scooped out the seeds and shredded it with a fork.  I couldn’t believe how much there was!


Putting it all together with a little tomato basil pasta sauce and it was a hearty meal that kept me full all night, even after a 2 mile walk/run.  Looks delicious right?


I will definitely be buying spaghetti squash again soon.  And I have leftover meatballs!
