What I’ve Been Eating, in Pictures

Part of my persona trainer’s plan is to change my diet so this past week and a half I’ve really been focusing on eating according to his recommendations.  It hasn’t been as hard as I thought it would be to stay away from most grains but I think that is because I’ve been searching out new recipes to try to make “meat and veggies” more exciting.  Who knows!

Anyway, I thought I’d share what I’ve been eating with you!

My breakfasts have been primarily eggs with veggies so I’m trying to mix it up.  One day it’s scrambled eggs with peppers and spinach, the next it is “eggs in a nest” which is eggs cooked inside of pepper rings.  Of course, I add a couple slices of bacon from time to time too :)



Lunches and dinners have been more interesting.  I usually make enough to have leftovers for lunch or nights I don’t want to cook (which is most nights, but I try to do it anyway).  Here are a few of my favorites recently.


This recipe came from Julie at PaleOMG and was a nice new twist on the sweet potato.  Really tasty and filling!



This is the soup recipe I posted the other day.  Very tasty and easily my favorite way to eat a big bunch of kale!



This was definitely better than my normal tuna-and-mayo tuna salad.  This recipe came from Lindsay at the Lean Green Bean.  I would never have thought to mix hummus and avocado into tuna rather than mayo but that’s why I read some food blogs!



This recipe really is called “The Best Chicken You Will Ever Eat.  Ever.”  It involves brining the chicken in a combination of herbs and spices and then coating the chicken in another mixture of spices.  I densely coated those suckers and then grilled them and the spices became like a skin on the chicken.  It gave it really good flavor!  I think this chicken would be good with different sauces or dips too.

Thanks Mel! I sure don’t consider myself great at taking food pictures but I’m glad they look appetizing! You’ll probably see more of your recipes here in the future :)
