Recipe: Kale & Sausage Soup

I’m not really a food blogger or a recipe creator but sometimes I have just enough inspiration from something I’ve eaten before to try my hand at making a dish without a recipe.

I first had a soup similar to this at my friend Nina’s house.  She tends to be a good influence when it comes to eating more vegetables in new ways.  She’s the one that convinced me to try the Zucchini Pesto Pizza recipe after all and that was delicious!

This soup is pretty simple and quick to make.  And it really is tasty.  I promise.  Turns out kale is not just for vegetarians anymore!  (Seriously, that’s what I used to think.  I never ate it before starting this blog!)

One note: I used kale cubes that I already had in the freezer.  Another tip I got from Nina!


Kale & Sausage Soup

– Time: 30-40 minutes

– Makes 3-4 servings, depending on size


  • 1 lb ground Italian sausage (or pork sausage if you don’t like a little spice)
  • 1 yellow onion, diced
  • 4 cloves of garlic, diced (or use minced garlic from the jar… it’s easier!)
  • 1 bunch of kale, chopped
  • 4 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning
  • Salt & pepper to taste


  1. Cook sausage in a skillet.  Drain and set aside.
  2. Put olive oil in the bottom of a large soup pot on medium-high heat.
  3. When oil is warm, put in onions and garlic and cook for 3-5 minutes or until onions are translucent.
  4. Add half the chicken broth and the kale.  Cook for 3-5 minutes.
  5. Add rest of the chicken broth, sausage, and seasonings.
  6. Bring to boil, turn heat to medium-low and simmer for about 15-20 minutes.
  7. Serve!
