Recipe: Cranberry, Sweet Potato, Cottage Cheese Muffins

I know the name of this recipe is long and has a lot going on but the result is really tasty!  The resulting muffin is short and a little dense, but very moist.  The cranberries add the perfect amount of tart fruitiness.  Though I did learn not to pop fresh cranberries like cherries.  Yes, I probably should have already known that!

Cranberry Sweet Potato Cottage Cheese Muffins

*Made 11 muffins – 108 calories each

  • 2 tbsp vegetable oil
  • 2 tbsp applesauce
  • 1/4 c brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/4 c skim milk
  • 1/2 c fat-free cottage cheese
  • 1/2 c sweet potato, cooked and mashed
  • 1 c white whole wheat flour
  • 1 tsp baking powder
  • 1 c cranberries, fresh or frozen

1. Combine first 8 ingredients in a bowl and mix well

2. Add flour and baking powder and stir until just combined

3. Stir in cranberries

4. Scoop into greased muffin pan and bake at 350 for 30 minutes.

I made these too! subbed almond milk for the regular, super tasty!!
